Chicken and Bean Torta


  • meat from one My Dad & Me stewing hen
  • 1 onion, diced
  • Olive oil
  • 2-4 fresh garlic cloves, minced
  • 1 tsp. sea salt
  • ½ tsp. pepper
  • Chili powder to taste (if you like spicy, add plenty & also cayenne pepper)
  • 2 cups cooked black beans
  • 2 cups diced tomatoes
  • 4 tortillas
  • 1½ cups grated cheddar cheese
  • Sour cream

Cook stewing hen in slow cooker as directed in the “Homemade Chicken Broth” recipe. Pick meat from bones and chop into pieces.

Sauté onion in olive oil over medium-low heat until tender. Add garlic and sauté for a couple more minutes. Add chopped chicken and season with salt, pepper, and chili powder. Stir in beans and tomatoes. Put a little oil in the bottom of your crockpot, then put a tortilla on the bottom. Spoon 1/3 of the chicken mix onto tortilla and sprinkle with 1/4 of the cheese. Repeat. End with tortilla sprinkled with cheese. Cover and cook on low 4-5 hours. Serve with sour cream and green onions, if desired.
