Cream of Chicken Soup

  • One My Dad & Me stewing hen
  • Water to cover chicken

Cook stewing hen in slow cooker as directed in the “Homemade Chicken Broth” recipe. Pick meat from bones and dice.

  • 6 TBSP butter
  • 1/3 cup flour (can substitute arrowroot, but use about 3 TBSP instead)
  • ½ cup Milk
  • ½ cup Cream
  • 3 cups chicken broth
  • 1 cup finely chopped chicken
  • sea salt & pepper to taste

Melt butter in saucepan. Blend in flour; add milk, cream, and broth. Cook and stir until mixture thickens and comes to a boil. Reduce heat. Stir in chicken and a dash of salt & pepper. Heat again just to boiling; serve immediately. Garnish with fresh parsley.
