Creamy Chicken ‘n’ Kale Soup


  • 1 My Dad & Me Stewing Hen
  • Water (enough to cover chicken)
  • 1 large onion, diced
  • 1 cup diced celery
  • 1 ½ cups sliced carrots
  • 2 turnips, diced
  • 2 tsp. dried tarragon (or other herbs of your choice)
  • 8 oz. My Dad & Me shiitake mushrooms, sliced
  • 6 oz. My Dad & Me kale, torn or sliced into pieces
  • ½ tsp. salt (or to taste)
  • ¼ tsp. pepper
  • 1 cup Cream

Cook stewing hen in slow cooker as directed in the “Homemade Chicken Broth” recipe. Add onion, celery, carrots, turnips to slow cooker and cook on high for 1 hour. Add mushrooms, tarragon, salt, and pepper and cook for 1 hour longer. Add kale 15 minutes before serving. (Note: If you don’t like it slightly undercooked and bright green, the kale could be added with the mushrooms.)  Add cream just before serving.
