What is kefir?

Kefir is fermented milk. It looks like a somewhat curdled milk, or a runny yogurt.

What are kefir grains?

Kefir culture or “grains”, which are used to make kefir, look like white, semi-clear cauliflower florets. The kefir culture is referred to as “grains”, though it shouldn’t be confused with the ordinary sort of “grain”, which usually comes to mind. Kefir grains are a combination of yeasts and bacteria, along with some sugars and proteins. Kefir grains aren’t “made”, but rather grow as they are cultured.

1. Place kefir grains in a clean glass jar.

2. For every tablespoon (approx.) of grains, add 7-8 ounces of milk
(making one cup total per tablespoon of culture).

3. Cover jar loosely, and allow to sit at room temperature, out of
direct sunlight. On top of the fridge or in a cupboard are great
places to make kefir!

4. After 12-24 hours, strain the kefir using a strainer or colander.
Enjoy your fresh kefir, or store in the refrigerator for up to several
months.

5. Place the grains in a clean jar (or, return to the same jar if you
like; I usually use the same jar for several days before washing it)
and repeat steps.

    I make kefir and kefir “cheese” out of “My Dad and Me” delicious milk! It is so easy once you get the hang of it and we love it so much we eat it daily. It is easy to make the cheese if you don’t care for the kefir as much. You just strain in cheese cloth in frig. after kefir is made. You can flavor kefir with organic tangerine peel and sweeten with stevia after made. If you are a bit lactose intolerant you can ferment another 24 hours, after kefir is made and strained of grains, to remove lactose sugars (it will separate). So easy and I heard Kefir and Kefir cheese have about 40 to 60 different good bacteria strains in it! It is a superfood! Great for irregularity too!
