Maple Vanilla Ice Cream

Makes 1 ½ quarts:

  • 3 cups Cream
  • 1 cup Milk
  • 1 tsp Vanilla Extract
  • ½ cup Maple Syrup (or to taste)
  • ¼ – ½ tsp Salt (to taste)
  • 4 My Dad & Me Egg Yolks

Combine cream & milk in medium bowl. Add vanilla, maple syrup, and salt and test for enough sweetness and salt. Lightly beat egg yolks and add to cream/milk mixture stirring well. Pour into ice cream maker and follow directions for your ice cream machine. Serve with Carob Sauce & Toasted Almonds (see recipes below).

Carob Sauce

  • 2/3 cup Roasted Carob Powder
  • 1/3 cup My Dad & Me Raw Honey or Sorghum Syrup
  • ¼ cup Warm Water
  • Dash Salt

Combine all ingredients & stir with wire whisk until a syrup consistency is reached. Drizzle over ice cream.

Toasted Almonds

  • ¼ cup Butter (made from Cream)
  • 2 cups Almonds (sliced)
  • Salt (to taste)

Melt butter in iron skillet over low heat. Add almonds stirring often until browned. Sprinkle on top of ice cream.
